Carrot cake biscuits

Whoever was the first to bake a carrot cake definitely had a thing for carrots! The carrot cake is by far one of the most tasteful, delicious, healthy and festive cakes. Your kid will make it vanish in seconds for sure! However, kids cannot fit a carrot cake into their pockets. What's the solution to that?

Biscuits exactly as carrot cake, same taste but in smaller portions, harder to bite but ready to sink in the kid's milk.  Bored of usual biscuits? Try the carrot biscuits! You will need:

  • 1 cup of cow butter - finest quality
  • ¾ cup crystal sugar
  • ¾ cup brown sugar
  • 1 vanilla
  • 2 ½ cups of flour
  • 1 teaspoon baking soda
  • 2 teaspoons cinnamon powder
  • 2 cups of thick grinded carrot
  • 1 cup of walnuts in smashed, thick pieces

The process is simple:

Mix the butter with the two kinds of sugar until creamy and add one egg at a time. Stir all dry ingredients together and insert in the liquid mixture while constantly stirring.

Add the carrot and the walnuts and give it a good stir.

Put on an oven pan covered with a baking paper by using a teaspoon. Leave 2-3 cm of distance between them and bake in preheated oven at 170 degrees until done; should take about 15-18 minutes.

The outcome? Crispy on the outside, soft and smooth inside!
